MD & Founder, Athulya Hotels

Navigating the realm of budget hotels can pose challenges, as the commitment to promised services often diverges significantly from the reality experienced by guests. Disparities in quality and delivery can cast a shadow on the anticipated stay, highlighting the potential discrepancies between assurance and actuality. This variance underscores the complexity of managing expectations within the budget hospitality sector, making informed choices and diligent research crucial for a satisfying and seamless experience. Witnessing these scenarios personally, Chef and Entrepreneur – Dhivya Ramesh, took it upon herself to tackle these issues uniquely, leading to the inception of Athulya Hotels.

As an Executive Chef, Dhivya's devotion to the art of Food & Beverage is palpable. Her culinary prowess goes beyond the mere creation of dishes; it's a symphony of flavours, textures, and experiences carefully woven together. A strong believer in the power of exceptional experiences, she places great emphasis on ensuring that every guest who steps into Athulya Hotels is met with an unforgettable journey, leaving behind cherished memories. Below is an excerpt of Dhivya Ramesh’s exclusive interaction with Women Entrepreneur magazine.

What factors or experiences influenced your decision to pursue a career in the food and beverage industry?

My journey into the captivating realm of the food and beverage industry finds its roots in the cherished memories of my grandmother's culinary prowess. Her remarkable skills ignited a flame of inspiration within me that has burned brightly since my early school days. I recall with fondness how I eagerly immersed myself in her kitchen, entranced by the tantalizing aromas that wafted through the air. It was during my formative years, around the seventh or eighth standard, that I began to experiment with cooking myself. The allure of crafting flavours and the sheer joy of culinary creation consumed me. Amidst a societal chorus championing careers in engineering and medicine, I stood resolute in my desire for a distinctive path, one aligned with my passion. Thus, I embarked on a journey into the world of hotel management, driven by a solid determination to pursue what truly ignites my spirit.

What motivated you to establish Athulya Hotels & Resorts? Tell us about the underlying idea behind the venture and its key areas of specialization.

Having dedicated twenty years to the industry, a surge of untapped potential and creativity emerged within me, eager to be realized. While traveling and staying in budget hotels, I noticed many unfulfilled promises and superficial experiences, igniting a strong desire to bring my ideas to life. The landscape appeared filled with shallow offerings that left me disappointed. This conviction to make a difference led me to not only enhance the industry with my experience but also transform it. This journey led me to step beyond my professional comfort zone to turn my visions into reality. Athulya Hotels was born from this passion, aiming to embody authenticity and genuine commitment. Our establishment stands as a place where promises are upheld unwaveringly.

In your opinion what are some of the most critical challenges you encounter as a leader in the Indian hospitality sector? What steps do you undertake to overcome these roadblocks?

In the initial stages of our journey, I embraced a twofold endeavour – not merely as a chef launching a restaurant, but as a designer of an all-encompassing sanctuary of hospitality, seamlessly uniting lodging with culinary mastery. The outset brought forth a web of challenges, with the industry's influence looming large. However, maneuvering through these complex challenges unveiled a wealth of wisdom and insight. Friends emerged as steadfast allies, aiding in facing and conquering these hindrances, exemplifying the potency of collaboration.

Our conquest over trials weaves a narrative of experience, with each thread contributing to our development. Amidst the unprecedented waves of COVID-19, our venture materialized after the third wave, ushering in a fresh arena of obstacles. Our commitment birthed a meticulous approach, ensuring their ease and tranquillity through rigorous protocols and attentive care. This devotion, forged amidst challenges, now guides us as we steer toward a brighter horizon of growth and distinction.

How do you foresee the Indian hospitality space evolving and changing in the years to come? Which industry trends will create the most impact?
